Garam Masala

  • 1/2 oz ground coriander
  • 2 oz ground cumin
  • 1/2 oz ground cloves
  • 1/2 oz ceyenne pepper
  • 1/2 oz ground cinnamon

or

  • 1 tablespoon ground cumin
  • 1 ½ teaspoons ground coriander
  • 1 ½ teaspoons ground cardamom
  • 1 ½ teaspoons ground black pepper
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg

Mix spices well, spread on flat baking sheet, toast at 250, being careful of burning, cool, store in air tight container.
