Serves 6
- 3 clove crushed garlic 1 t marjoram or oregano
- 1 c chopped onion 1 1/2 t basil
- 1/2 c diced celery 4 c stock
- 1/2 c diced carrot 3 oz tomato paste
- 1/2 c chopped pepper 1/4 c dry red wine
- 1 c zucchini chunks 2 c cooked white beans
- 1 1/2 t salt 1 c sliced black olives
- black pepper 1 T fresh lemon juice
Saute first 10 ingredients beginning with onion and garlic. Add to remaining ingredients in kettle. Simmer covered, very gently, about 30 min. Just before serving add 1/4 c chopped parsley. Garnish with chopped tomato or grated parmesan.
