Shirley's White Bean & Black Olive Soup

Serves 6

  • 3 clove crushed garlic             1 t marjoram or oregano
  • 1 c chopped onion                  1 1/2 t basil
  • 1/2 c diced celery                 4 c stock
  • 1/2 c diced carrot                 3 oz tomato paste 
  • 1/2 c chopped pepper               1/4 c dry red wine
  • 1 c zucchini chunks                2 c cooked white beans
  • 1 1/2 t salt                       1 c sliced black olives
  • black pepper                       1 T fresh lemon juice

Saute first 10 ingredients beginning with onion and garlic. Add to remaining ingredients in kettle. Simmer covered, very gently, about 30 min. Just before serving add 1/4 c chopped parsley. Garnish with chopped tomato or grated parmesan.
