- 2 cups raw rice
- 3 cups water
- ½ teaspoon salt
- 1 tablespoon butter
- 1 cup plain yogurt
- 1/3 cup honey
- 1 cup chopped apple
- 2/3 cup diced celery
- ¼ cup raisins
- ¼ cup chopped pecans
Cook rice in water with salt and butter according to package directions. Cover and let stand until all water is absorbed. Combine yogurt and honey. Stir into hot cooked rice. Cover and chill. Stir in apples, celery, raisins, and pecans. Check seasonings. Add salt, dash of cinnamon, or dash of nutmeg if desired.
