Shirley's Beef Stuffed Peppers

Serves 6

  • 1 lg tomato diced
  • 6 green peppers                   3 T chopped basil
  • 3 T Olive oil                     3 T chopped parsley
  • 1 onion chopped                   1 egg beaten
  • 3 clove garlic minced             1/4 c sesame seeds
  • 1/2 lb ground beef                1/2 c shredded mozzarella
  • 2 T balsamic vinegar              1/2 c Parmesan cheese
  • 1 c cold cooked rice                     s & p to taste

Heat oil over medium heat. Add onion and garlic. Saute 5 minutes. Add beef.Saute 5 minutes until just done. Stir in tomatoes and vinegar. Simmer 15 minutes. Stir in rice basil and parsley. Cook 2 minutes and remove from heat. Stir in egg and half the cheeses. Preheat oven to 375 degrees. Stuff peppers. Sauce baking dish. Add stuffed peppers to baking dish. Top with remaining cheese and sesame seeds. Lightly sauce and bake 30 minutes.

Vegetarian Stuffing

  • 2 small zuchinni diced            6 garlic clove minced
  • 2 T olive oil                     2 c cooked rice
  • 2 c minced onion                  1 1/2 c cottage cheese
  • 1/2 lb mushrooms sliced           1 c grated cheddar
  • 1 t salt                          1/2 c chopped parsley
  • 2 t basil                         tabasco and soy to taste
  • dash of thyme                     1/4 c sesame seeds
  • 1 t oregano
  • black pepper to taste

Heat oil in skillet. Add onion, mushrooms,salt and pepper and herbs. Saute 5 minutes. Add zuchinni and garlic. Saute until zuchinni is tender. Transfer to large bowl. Add rice, cheeses, parsley,tabasco and soy. Taste to correct seasonings. Top with sesame. Stuff and bake as above.
