- 1 cup dry bulgar wheat
- 1½ cup boiling water
- 1½ teaspoons salt
- ¼ cup fresh lemon or lime juice
- 1 teaspoon minced garlic
- ½ teaspoon dried mint
- ½ cup chopped scallions
- ¼ cup olive oil
- 2 medium tomatoes, diced small
- 1 cup chopped parsley
- pepper to taste
optional:
- ½ cup garbanzos
- 1 chopped green pepper
- 1 chopped cucumber
- ½ cup grated carrot
Combine bulgar, boiling water & salt. Cover. Let stand 15-20 min. Add juice, garlic, oil & mint. Mix thoroughly. Refrigerate. Add additional veggies and pepper just before serving. Serves 4.
