- 1 can sweetened condensed milk (14 oz.)
- ½ cup sour cream
- ¼ cup lemon juice, freshly squeezed
- 1 teaspoon vanilla extract
- ½ cup margarine (soft, but not melted)
- ¼ cup light brown sugar, firmly packed
- 1 cup unbleached all-purpose flour, sifted
- ¼ cup quick-cooking oats
- ¼ cup finely sliced walnuts
- Assorted fruit: strawberries, blueberries, kiwi, peaches, bananas, pineapples
Any kind of fruit in season will work, wash, peel, and slice. Combine condensed milk, sour cream, lemon juice, and vanilla. Place margarine in the small bowl of an electric mixer and whip until will dispersed in the bowl. Add brown sugar and continue beating until fluffy. Mix in flour, oats, and nuts until thoroughly blended; sprinkle mixture with 2 tablespoons of water and blend for 1 minute longer. Pour 1/1 teaspoon of oil on a 12” pizza pan and brush oil into pan with paper toweling. Press flour mixture into pan, forming a rim around the edge and prick dough with a fork. Place crust in an oven preheated to 375 degrees F and bake 10-13 minutes or until crust is pale brown. Cool on a cake rack. Spoon filling evenly onto crust. Arrange fruit on surface of filling in circles, starting around the edge and working your way to the middle. Keep refrigerated until serving time.
